I realize you wrote this several months ago, but I just saw it. I work at a camp that while having an all organic, farm to table, kosher food program, it also caters to vegan, vegetarian ( ok, all of our meals are vegetarian except 2 per week), there are always dairy free and gluten free options. When we have Mediterranean food, the kids and adults with sesame allergies are invited to eat outside. We try to not let children with airborne allergies come to camp. It you’re interested I can get you in touch -or try to- with our head chef. I don’t where he got all of his training.... but he hasn’t killed anyone yet. :)
